Charlie’s Trout are dedicated to producing the very finest and freshest smoked trout.
Working hand in hand with Trafalgar Fisheries, Charlie’s fish are bred and hand reared at the hatchery high in Wiltshire's Chalke Valley. As fingerlings they are moved to the farm on the banks of the world famous Wiltshire Avon where crystal clear water from the chalk aquifers of the Salisbury plain flows freely through the ponds.
All the fish are prepared by hand and smoked over Wiltshire green oak before being hand sliced, beautifully packaged and whisked off to the customer! The cold smoked trimmings are made into the most delicious Handmade Smoked Trout Pate´, a mixture of smoked trout, herbs, lemon, creme fraiche, soft cheese, horseradish and black pepper.
