In the Middle East falafel is a much-loved street food that depends on inexpensive local produce. Hoxton Beach, which has been making and selling falafel wraps since 2004, takes the same approach. They use some imported chickpeas but the heart of their falafel is UK-grown fava beans supplied by Hodmedod from East Anglia. They are the only falafel outfit we know to make their own pickles using locally grown turnips and beetroot and Aspall’s Cyder Vinegar, which was the first ever product to be certified by the Soil Association back in 1946. These all go in bread wraps or ‘khubz’ made by West London’s specialist Lebanese bakers.
