After following an early career as an apprentice patissier in his native France, the young Olivier came to London and worked his way up the baking ladder. He opened his own bakery in 2011. Using only organic flour and top quality ingredients which are carefully sourced, Olivier's breads are freshly made daily and all hand made. No flour improvers, or chemicals. The bakery also specialises in 100% spelt products, including a 100% spelt bread, 100% spelt croissants, cookies and tea cakes.
