The tradition of curing, smoking the meat has been passed down to Gintaras Kurtinaitis from his grandfather via his father. As a child Gintaras saw the process and enjoyed the flavours of smoked charcuterie. As an adult he has carried on the tradition, replicating the tastes and the quality of Lithuanian charcuterie. Gintaras started paying attention at the neighbouring countries traditions and recipes, this led further afield and today he makes charcuterie with recipes collected from Norway to China. He says it is always a huge pleasure to see the happy faces when customers find the food they have been missing for a long time.
